Recipe for Salmon Salad Sandwich
Salmon Salad Sandwiches
Light Whole Grain Bread

Ingredients:

  • 8 slices Aunt Millie's Healthy Goodness Light Whole Grain Bread
  • 1 Can (7.5 oz.) salmon
  • 2 Tbsp. green onion, finely chopped 
  • 1 Tbsp. light mayonnaise
  • 1 Tbsp. non-fat plain yogurt
  • 1 Tbsp. lemon juice 
  • 2 tsp. fresh parsley, minced 
  • 1 tsp. fresh dill, minced 
  • 1/8 tsp. salt
  • Pinch of black pepper
  • Small bag of lettuce 

Yield: 4 Sandwiches

Directions:

  1. Drain the salmon and place in a bowl.
  2. Place the remaining ingredients (except lettuce) in with the salmon, and combine gently.
  3. Lay lettuce on bottom of 4 slices for bread, and top with even portions of the salmon mixture.
  4. Top with remaining 4 slices of bread.
