Baked French Toast Muffins
Aunt Millie’s Best Grains Honey & Crunchy Oat Bread

Ingredients:

  • 1 loaf Aunt Millie’s Best Grains Honey & Crunchy Oat Bread, torn into cubes to equal 6 cups of bread
  • 5 eggs
  • 2 c. milk
  • 1/2 c. sugar
  • 1 Tbsp. vanilla extract
  • 1 tsp. ground cinnamon
  • ½ tsp. ground nutmeg

Cinnamon Streusel Topping:

  • ¼ c. cold butter
  • ¼ c. light brown sugar
  • ¼ c. all-purpose flour
  • 1/8 tsp. ground cinnamon
  • Pinch of salt

Yield: 12 servings

Directions:

  1. In a medium bowl, whisk together the milk, eggs, sugar, vanilla, and cinnamon.
  2. Add bread to the egg and milk mixture and mix until bread is thoroughly moistened.
  3. Grease 12 cup muffin tin. Add bread mixture to muffin cups until 2/3 full. Cover and refrigerate overnight.
  4. Preheat oven to 350 degrees.
  5. Meanwhile, make the streusel topping by combing all the ingredients until you have a nice crumbly texture. Top each muffin with some of the streusel topping.
  6. Bake 25-30 minutes until golden brown.
  7. Serve French toast muffins hot with butter and maple syrup.
