Sloppy Joes and Four Cheese Soup
Kaiser Buns 

Ingredients:

  • 2 packages Aunt Millie's Kaiser Buns
  • 1/4 cup onion, chopped
  • 1 Tbsp. butter, softened
  • 1 lb. ground beef
  • 1/2 cup ketchup
  • 1/4 cup water
  • 2 Tbsp. celery, chopped
  • 1 Tbsp. lemon juice
  • 2 tsp. brown sugar
  • 1 Tbsp. Worcestershire sauce
  • 1/2 tsp. vinegar
  • 1/4 tsp. seasoned salt
  • 1/4 tsp. dry mustard 
  • French Fried Onions - optional

Yield: 16 Sandwiches

Directions:

  1. Melt butter in a large skillet. Add onion and cook until translucent.
  2. Add ground beef and cook until browned and cooked through.
  3. At this point, you could transfer the beef to a crock pot, if desired.
  4. Add the remaining ingredients, and simmer on low until thickened.
  5. Put approximately 1/4 cup mixture on each bun.
  6. Top with fried onions if desired.

Soup Ingredients:

  • 1 cup of croutons from a package of Aunt Millie's plain croutons
  • 2 Tbsp. butter
  • 1 medium onion, chopped
  • 2 cans (14 1/2 oz.) low-sodium chicken broth
  • 3/4 cup potato flakes (instant potatoes)
  • 2 cups half-and-half
  • 2 cups Italian Blend shredded cheese
  • 1 cup cheddar cheese, shredded

Yield: 8 servings

Directions:

  1. Heat a large stock pot over medium heat. Add the onion and cook until translucent.
  2. Add stock and potato flakes and bring to a boil.
  3. Lower the heat and add the half-and-half. Bring to a gentle simmer.
  4. Gradually add the cheeses to the soup until melted. Do not boil.
  5. Top with croutons.
