Aunt Millie’s Food Safety program is designed to deliver high quality and safe bread products in accordance with the Global Standard for Food Safety, American Institute of Baking (AIB) Food Standard for Food Safety, as well as all Food and Drug Administration, United States Department of Agriculture, State, and local Food Safety Standards.

In order to achieve this level of food safety, the management team of each producing plant has received certified Hazardous Analysis and Critical Control Points (HACCP) training from the AIB. This training is the recommended international code of practice.

After this training, each management team develops a HACCP plan specific to their facility. Parts of this plan include supplier approval, allergen control, good manufacturing practices (GMPs), chemical control, sanitation, preventative maintenance, receiving, food defense, internal audit, and other key areas.

These programs are audited by third party inspectors at least twice a year. Each plant receives an AIB Food Safety/GMP audit, as well as a Certification Audit under the British Retail Certification Standard. These audits are comprehensive in scope, covering areas in quality, hygiene, and product safety.
