Pesto Grilled Cheese

Calcium found in dairy products is important not only for strong bones and teeth, but also for a strong heart. For maximum health, strive to include 3 servings of low fat or non fat dairy in your diet each day.

Indiana GrainIngredients:

  • 2 slices Aunt Millie’s Organic Indian Grain Bread
  • 1 ½ ounce reduced fat Swiss cheese
  • 1 tablespoon pesto
  • 4 slices Roma tomato

Yield: 1 sandwich

Directions:

  1. Heat nonstick skillet over medium heat
  2. Spray one side of one slice of bread with nonstick butter flavored cooking spray and place in heated skillet
  3. Place cheese on top of bread in skillet and top with tomato slices
  4. Spread pesto on second slice of bread. Place this slice, pesto side down on top of sandwich in skillet.
  5. Spray second slice of bread with nonstick butter flavored cooking spray
  6. Cook sandwich until slightly brown (about 3 – 4 minutes).
  7. Turn sandwich over and cook an additional 2 – 3 minutes or until brown and cheese is melted.
