Ingredients:
- 2 Tbsp. butter
- 2 Tbsp. flour
- 2 cups milk
- 1 1/2 to 2 cups grated cheddar cheese
- Salt and pepper
- 1- 3 to 4 pound Eye-of-Round Roast
- 2 Tbsp. of your favorite Steak Seasoning Blend (or your own blend of garlic, salt, pepper, etc.)
- 2 Tbsp. olive oil
- Aunt Millie's Wheat Mini Sub Buns
- Cooking spray or melted butter
Optional Toppings:
- Grilled onions
- Grilled mushrooms
- Grilled green peppers
Yield: Makes 8 Sandwiches with plenty of leftover steak for Blackened Steak Sandwiches
Directions:
- Preheat oven to 325 degrees.
- Coat roast with olive oil, and rub with the steak seasoning on all sides of the roast. Please in roasting pan and bake approximately 50-60 minutes. (Internal temperature should be about 140 degrees. The temp will rise while resting.)
- Remove from oven, cover with aluminum foil, and let rest at least 5 minutes.
- Using an electric knife, cut the beef roast into 1/8" thick slices. The slices should be very thin.
- While the roast is cooking, melt the butter in a medium saucepan.
- Whisk in the flour and cook for 1 minute.
- Slowly add the milk, whisking constantly, until well blended.
- Cook until thickened.
- Whisk in the cheese and cook gently over low heat until melted.
- Season with salt and pepper and keep warm until roast is ready.
- While roast is resting, coat Aunt Millie's Mini Sub buns with cooking spray or melted butter.
- Toast them (opened and laying flat) in the oven on a cookie sheet for about 5 minutes.
- Remove from oven and let them cool.
- Place meat on the toasted Aunt Millie's Mini Sub buns, top with the melted cheese mixture, and your favorite grilled vegetables.
