Ingredients:
- 1- 3 to 4 pound Beef Tenderloin, Sirloin, or Eye-of-Round Roast
- 2 Tbsp. Olive Oil
- 2 tsp. Kosher Salt
- 2 Tbsp. freshly ground black pepper
- Aunt Millie's Super Sub Buns
- Cooking spray or melted butter
- 8 slices cheddar cheese
- Horseradish Mayonnaise - Recipe Below
- Bag of Spring Green Salad Blend
Yield: Makes 8 Sandwiches with plenty of leftover steak for Cheesy Beef Sandwiches
Directions:
- Heat oven to 325 degrees.
- Rub meat with oil and season with salt and pepper
- Place in roasting pan and bake uncovered for about 50-60 minutes. (internal temperature should be about 140 degrees. The temp will rise while resting.)
- Remove from oven, cover with aluminum foil, and let rest at least 5 minutes.
- Cut to desired thickness.
- While roast is resting, coat Aunt Millie's Super Sub buns with cooking spray or melted butter. Toast them (opened and laying flat) in the oven on a cookie sheet for about 5 minutes.
- Remove from the oven and let them cool.
- Spread the horseradish mayonnaise on each bun, and top each with steak, cheddar cheese, and a bunch of the spring green salad blend.
Horseradish Mayonnaise:
- 1/2 cup prepared mayonnaise
- 2 Tablespoons prepared horseradish, drained
- Pinch of salt
Directions:
- Whisk all ingredients together in a small bowl.
- Season, to taste, with the salt.
- Cover and refrigerate at least 30 minutes before using.
