Italian Sausage and Olive Brunch

Aunt Millie's Plain Croutons

Ingredients:

  • 3 cups Aunt Millie's plain croutons
  • 1 lb. sweet Italian sausage (casings removed)
  • 1/4 c. minced onion
  • 1 large garlic clove, minced
  • 8 oil-packed sun-dried tomatoes, drained and chopped into small pieces
  • 1/2 c. sliced black olives
  • 8 eggs
  • 1 3/4 c. milk
  • 10 oz. package of frozen spinach, thawed and squeezed dry
  • 8 oz. package Italian style shredded cheese

Yield: 10 Servings

Directions:

  1. Spray a 9" x 12" baking dish with cooking spray. Spread croutons over bottom of the pan.
  2. Brown the sausage, onion, and garlic in a medium skillet over medium-high heat. Drain off the fat when thoroughly cooked.
  3. Add the tomatoes and black olives to the sausage mixture.
  4. In a large mixing bowl stir the eggs, milk, spinach, and cheese.
  5. Cover and refrigerate at least 8 hours or overnight.
  6. Preheat oven to 350 degrees.
  7. Place in oven and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
